Slow Cook Friday: CHICKEN CACCIATORE

I bought the e-book.  It is not well organized, but has good recipes.

CHICKEN CACCIATORE IN CROCK POT
(From Getcrocked)





1 lb. chicken breast (Thigh, cheaper)
1 large undrained can of diced tomatoes (two pints of home canned)
1 onion, diced
1 green pepper, seeded and chopped
Minced garlic (to taste, about 2 cloves)
1 T. Italian herbs
Red pepper flakes to taste. (One dried pepper from my garden)
Optional: fresh or canned mushrooms (Fresh, of course)
Corn (cut from fresh on the cob)
Cream of Mushroom



1. Place all ingredients in a crock pot
2. Cook all on low 6-8 hours until falling apart.
3. Serve over your favorite pasta
4. Generously top with Parmesan cheese
